Spirulina Green Chicken Salad
This fresh and tasty power-packed chicken salad is packed with goodness to supercharge your workout, enhance your mood and keep skin and hair looking healthy and beautiful.
Serves 2
Preheat the oven to 180°C (350°F) Gas 4
INGREDIENTS
2 chicken breasts
sesame oil, to drizzle
3 spring onions finely chopped
2 tablespoons chopped fresh coriander
2 tablespoons chopped fresh mint
2 tablespoons dried fried onions
2 tablespoons toasted sesame seeds
Cooked brown rice or a mixed green salad, to serve
DRESSING
4 tablespoons freshly squeezed lime juice
1 teaspoon spirulina powder
1 tablespoon fish sauce
1 tablespoon finely chopped fresh ginger
2 tablespoons sweet chilli sauce
METHOD
Drizzle the chicken breasts with sesame oil, then wrap loosely in foil.
Put on a baking sheet and bake in the preheated oven for 15-20 minutes, until cooked through.
Cool slightly, then pull the meat apart with your fingers to shred it and put in a large mixing bowl.
Add the spring onions, fresh coriander, fresh mint, dried fried onions and sesame seeds to the chicken and toss together.
In a separate small bowl, whisk all the dressing ingredients together.
Drizzle over the chicken salad and mix together, then serve with either cooked brown rice or a big green salad.
SPIRULINA
Spirulina is a blue-green algae that is said to be one of the most nutritious and nutritionally concentrated food sources. It is a true powerhouse of multivitamins, minerals and fatty acids. Its super-high level of amino acids, vitamin A, essential fatty acids and betacarotene can be easily used by the body to help support growth. It is the healthy fat called ‘GLA’ found in spirulina that is particularly good for keeping your hair shiny and lush, as well as your skin clear. I find adding a teaspoon of spirulina to many dishes or morning smoothies is a brilliant way to feed your body what it needs so you can glow inside and out.
