Ultimate avo dip
The ideal bring-a-plate option for any picnic or barbecue, this guacamole by chef and cookbook author Sam Parish is easy, versatile and delicious.
PREP TIME: 10 minutes
Ingredients:
250g sour cream
1 x 30g sachet taco seasoning
4 avocados, peeled and destoned
juice of 1 lime, plus extra wedges to serve 3 vine-ripened tomatoes, diced
1 bunch spring onion, sliced
200g cheddar cheese, freshly grated smoked paprika and corn chips, to serve
Method:
Mix sour cream and taco seasoning in a bowl.
Roughly mash avocados with lime juice.
Spoon sour cream onto a serving platter, add avo, then scatter with tomato, spring onion and grated cheese.
Scatter with paprika and serve with corn chips and lime wedges.
Serves 6-8 as a starter
Spice it up: With a good glug of chipotle hot sauce in the sour cream mixture, and some jalapeños.
Jazz it up: With a frozen margarita or two.
